Applewood Cheddar Stuffed Turkey Meatloaf with homemade caramelized onion BBQ sauce

Preheat oven to 350
serves 4

Ingredients for meat loaf

1lb of ground turkey (white meat only) organic free range is what I always try to use
3 tbs olive oil
1 egg
1 crushed garlic clove
1/2 cup panko breadcrumbs
1/2 cup finely shredded carrot
2 cups of spinach well chopped
1 tbs salt
1 tps white pepper
2tbs milk
1 cup Applewood cheddar shredded

Mix all ingredients well and mold into a big meatball with a dip in it…place the cheese inside and work the meat into a “loaf” form…so that the cheese it tucked inside the middle of the meatloaf….

Place in a pyrex dish and back at 375- for 20 minuets….in the meantime….

Ingredients for the caramelized onion honey bourbon BBQ sauce

2 vadalia onions sliced thin
3 tbs olive oil
2 tbs balsamic vinager
1/2 cup Heinz ketchup
2 tbs bourbon
2 tbs honey
juice of 1/2 orange
salt & pepper to taste

In a pan heat olive oil, add onions and let them caramelize this will take some time….have to reduce and become a sticky heap of goodness, seriously most important step of the whole thing….once onions are done deglaze the pan with the balsamic and juice of the orange, then add the other ingredients let simmer for 10 minutes….season to taste

Check on meatloaf add the BBQ sauce to the top and turn heat up to 400 bake for another 20 minuets. Should have some sauce let to have on the side.
