Buttermilk soaked crispy oven “fried” chicken.
4 free range organic chicken breasts (skinless, boneless)
2 cups low fat buttermilk ( to soak chicken with)
1 egg + 1 egg white (beaten)
1/3 cup whole wheat flour
1/2 cup panko
1 & 1/2 cups crushed cinnamon pecan or vanilla almond Special K cereal crushed (use a rolling pin if you have one!)
1 tbs garlic powder
1tsp cayenne pepper (more if you like it spicy
2 tbs brown sugar
Preheat oven to 400 degrees & prep a cookie sheet by adding a good drizzle of oil or veg oil to the bottom of sheet pan.
I like to soak the chicken overnight in the buttermilk, but if you dont’ have all night a couple of hours will work as well. Remove chicken from buttermilk and pat dry. Set up two stations for a dredge and coat. First in a zip-lock bag put chicken and ad the whole wheat flower to get a good coat and give it a shake, it should be nice and coated. In a separate bowl have the beaten egg mixture with a little salt and pepper added. You will dredge the chicken in the egg mixture and then into a bowl containing panko(japanese breadcrumbs), crushed cereal, brown sugar, cayenne pepper, salt and pepper mixed well. Once the chicken is dredged in the egg mixture then coated in the cereal mixture really well and straight onto the baking sheet. Drizzle the top of the chicken with a good quality olive oil and put into 400 degree oven for about 15 minutes…top should get golden brown at that point turn over down to 325 and bake for 40 minuets.
