Sweet potato+ Yukon+Cauliflower mash


Serves 4

One large sweet potato (peeled and cut into 1 inch cubes)

One large yukon gold potato (peeled and cut into 1 inch cubes)

One head of  Cauliflower (florets only)



4 oz of low fat cream cheese

3 tbs Olive Oil

3 tbs 1 % milk


In large stock pot add col water, enough to cover vegetables. Bring potatoes and cauliflower to boil, and cook until all are fork tender. Strain and return to pot, add olive oil, milk ,cream cheese with  emulsion blender until smooth…add salt and pepper to taste.
