my big fat greek turkey burger

Tonight I made a turkey burger that exceeded my expectations and I thought I would share the recipe with you… that I made up as I went along. I had defrosted a pound of organic, free range turkey breast and knew I was going to make a burger for dinner but what to do to make it special, turkey burgers can be a little lackluster. I saw the zucchini and feta grinning at me then I looked over and saw one bright yellow lemon winking at me on the counter. I thought why not a greek burger.

Here goes…

1lb good quality free range ground turkey breast

2 tbs olive oil (happened to have greek on hand)

1/2 cup feta cheese crumbled

Juice and zest of one lemon

1 cup finely grated zucinni ( I used my microplane grater to shred it and worked perfectly)

2 tbs panko bread crumbs

1 egg

heavy dash of pepper

 

Mix everything together, form into patties. In a hot pan with a tablespoon or so of olive oil pan sear the burgers until a crispy crust has formed flip them and reduce the heat down to low cover and cook for about 12-15 minuets.

You can serve these on a bun like a traditional burger but I chose to have mine with some roasted spaghetti squash and a caper yogurt with lemon zest…..
