Baby it’s cold outside…

Yesterday Jenny and I went on a 15 mile bike ride on the Loveland trail, it was 65 glorious degrees and a perfect day for a ride! I snapped a pic riding under my favorite bridge.



Today it was cold, rainy and while the yoga class with Jessica this morning had me feeling great after running some errands it seemed like making a big pot of soup was the right thing to do. I wanted to make something healthy to take for lunch this week, so here is what I came up with…

kale+white bean+carrot+leek +shitake soup

2 tbs olive oil

3 large carrots chopped

2 leeks cleaned and chopped

1 small sweet onion chopped

1 bunch kale leaves pulled off stem and torn into small pieces

1/2 pound shitake mushrooms (no stems) sliced ( or your favorite mushrooms)

2 cups  diced or crushed  tomatoes ( I love pomi brand)

2 cans of white cannellini beans drained

2 garlic cloves crushed

5-cups of water

1 tsp fresh ground pepper

1tbs salt

1tsp thyme

1 tsp oregano

1/2 tsp basil


In large stock pock heat oil, add carrots, onions, garlic, leeks let cook for 5 minuets add mushrooms, and kale continue to cook for another 5-7 minuets add herbs, salt, pepper, tomatoes, white beans let simmer on low heat for one hour. Adjust seasonings to taste. Easy, easy, easy.  It turned out delicious and I had a bowl for dinner with a piece of pita. You could also add chicken, shrimp or tofu for added protein if you choose.

      About 225 for a two cup serving! A friend of mine in Toronto made it and said it saw awesome, so that made me feel better about it. 🙂 Let me know if you like it! xo
