avocado mousse with orange zest
Makes 4 servings
In a large bowl combined:
2 avocados
juice of 1/2 orange + zest (reserve a bit of the zest for garnish)
1 tbs vanilla extract + 1/2 vanilla bean, scrapped
1/4 cup light coconut milk
5 tbs of pure maple syrup (more to taste if you want it sweeter)
5-6 tbs good quality cocoa powder (I used Trader Joe’s brand)
1 tsp cinnamon
a dash of salt
Using an immersion blender incorporate ingredients working in as much air as possible to achieve a airy consistency.
