Weekend update…. in pictures.

This weekend was a busy one, and there was a cute puppy who kept me on my toes and away from the computer! I wanted to let you know that the I am really enjoying the vegetarian challenge and here are some pics from the weekend you might like, starting with a meal in a box….or outside the box….

 

 

I was looking for something quick to fix for dinner and I had a box of Annie's pasta but I didn't think I should just eat it as is, so I added a little something to it....

I looked in the fridge and I had kale, leeks, edamame and outside a perfectly ripe heirloom tomato on the vine…..

It was a good reminder for me how fun it is to cook outside the box!

On Friday my mom treated me to a healthy lunch at one of our new favorite spots called Main Bite if you are local it’s in the Main Strauss/Covington area and I love it! Check it out here.

I ordered their open faced BLT without the bacon and it was so good, the greens were dressed with a light lemon vinaigrette and the avocado was perfect! They have the best blue cheese dressing I have ever tasted, which I had just a bit of on the side.

I would find myself back at the same place for a relaxing Sunday morning brunch with Melinda and Bob, where we shared food, and some much needed time catching up! I had their version of eggs benny with no meat but asked for a side of fruit!

I knew with a busy week ahead I had to make something to take with me for lunch on Monday, but it meant getting up extra early. No excuses, so when the alarm when off at 6:30 this morning I got up.

 

Tully was less than thrilled we were getting up early!

After getting Eddy Arnold squared away, I stole a few kisses from him and headed to the kitchen.

I chopped a carrot, zucchini, shallot and  sauteed in olive oil adding in some fresh diced ginger and edamame to the mix.

I added the rice I had made the day before and a sauce made of soy, peanut butter, garlic and orange juice to the mix....

Stirred it all together and let it simmer while I got some more snuggles from the dogs.

I brought some bean sprouts and a few peanuts to add on top for crunch and it was a great lunch that was filling and delicious. Worth getting up extra early to make. (Tully disagrees!)

That was the weekend, now I am thinking about all the heirloom tomatoes I have sitting in my veggie bowl in the kitchen. Up next is an heirloom tomato tart with smoked swiss and a phyllo crust. I am really digging this way of eating.
